So lunch today was fantastically phenomenal! And I’m here to give you guys the recipe ;)
So for this amaaaaazing lunch all you need are a few ingredients and some spices! It’s perfectly warm and filling for this rainy weather I have by me. Comfort food for the win!

Ingredients:
1/2 cup sliced mushrooms
1 yellow bell pepper, diced
1/2 can chickpeas, drained
1 packed cup baby kale
1/4 cup marinara sauce
minced onion, season-all salt, and basil to taste
Method:
Heat a nonstick pan with some oil or cooking spray. Add the mushrooms, diced pepper, and seasonings and cook on high for about 6-7 minutes, or until the mushrooms and peppers start getting pretty tender.
Add the chickpeas and lower the heat to medium, cooking for another 4-5 minutes.
Add the kale and wilt it. When the kale is almost done, add the sauce and cook for another 1-2 minutes. Serve warm!
I had mine with a side of toasted Ezekiel bread with hummus and a couple squares of this awesome chocolate with flaxseeds for dessert :)
